7 germans and the best vege-lasagna
i never imagined we would be cooking for 7 germans…
and with our household being somewhat vegetarian, we needed a freaking delicious meal if we were to please everyone.
enter: greek lasagna!
i give this dish about a 8/10. it’s eeeeeasy to prepare/cook. it’s a little bit pricier than your average lasagna… and it’s one of the only meals that we didn’t feel the need to add sweet chili sauce to before consuming.
Ingredients:
- 1 chopped onion
- lots of chopped garlic
- 10 or so chopped mushrooms
- a chopped courgette
- 2 chopped capsicums (aka bell peppers) red/green or yellow
- small head of broccoli chopped
- 4 cups of chopped tomatoes (tinned/canned)
- 1/3 cup of sweet corn (we got ours from a can)
- 185g of green pesto sauce
- 1/3 blue cheese
- 5 tbsp capers
- 5 tbsp chopped sun-dried tomatoes
- 5tbsp pitted chopped black olives
- 1/3 cup grated cheese for topping (mozzarella or cheddar)
- 200g lasagna sheets
Turn your oven on to 180 Celsius (356 Fahrenheit).
1. In a large pan, fry up the onion and garlic.
2. Add all the veges and cook for a while until they are all somewhat cooked.
3. Add the tomatoes and sweet corn and simmer for a while until it’s all hot.
4. Crumble the blue cheese, pour in the pesto sauce and add capers, sun-dried tomatoes and olives. Voila! This is the sauce.
5. Lay down some pasta sheets in a lasagna dish. Then add some sauce. Then some pasta sheets. Then some more sauce. Then some pasta sheets. And then sprinkle the grated cheese on top.
6. Cook for 30 minutes or until the top layer of pasta is soft.
Consume!
We served 8 people with this dish and we had 2 servings left over for lunch the next day. It actually tastes even better the next day, so make sure you have enough for leftovers.
