impromptu pasta with caramelized onion & aubergine in a creamy tomato & goat cheese sauce

This is amazing. We had an eggplant in the fridge that we NEEDED to use up, as well as some goat cheese that we bought on special a while back and so this is what i came up with.

I also think it would taste amazing with roasted red peppers.

I used:

- 3 cloves of garlic (chopped)
- half a small brown onion (chopped)
- some olive oil
- a small eggplant (aka aubergine, chopped into 1cm cubes)
- a can of diced/chopped tomatoes (a big can)

7 germans and the best vege-lasagna

i never imagined we would be cooking for 7 germans… :P and with our household being somewhat vegetarian, we needed a freaking delicious meal if we were to please everyone.

enter: greek lasagna!

i give this dish about a 8/10. it’s eeeeeasy to prepare/cook. it’s a little bit pricier than your average lasagna… and it’s one of the only meals that we didn’t feel the need to add sweet chili sauce to before consuming. :P

glorious! beet(root) burgers

so canadians don’t feel the need to put the word ‘root’ at the end of ‘beet’ like we do in new zealand. one canadian explained to me that this would be as silly as putting the word ‘root’ after any root vegetable and that maybe we kiwis just need it there to remind us that beets are a root vege. he then asked if we also say ‘carrotroot’ or ‘potatoroot’? we don’t – just to clear that up. but yes, we call beets ‘beetroots’.

sophisticated sunday morning crepes

sunday morning is synonymous with good breakfasts.  either in the form of the hangover cure (eggs and everything fry up), the traditional pancakes or the slightly more sophisticated crepes.

this sunday we opted for crepes. which is really just a pancake recipe sans the baking powder and with more milk.

you will need:

a cup of flour
2 eggs
1/2 cup milk
1/2 cup water
pinch of salt
butter or oil (we used a couple tablespoons of olive oil. it worked fine)

1. mix flour and eggs together.

2. slowly add milk and water (stirring)

things we eat

breakfast is the most important meal of the day.  it’s true.

and i get excited because i get to experience it every day.  as soon as it is over, i look forward to it’s reoccurence the following day.

living on a budget is fun when you actually enjoy what you’re eating. so we went to costco and bought a gigantic bag of oats, a whole lot of linseed (flax seed) and more raisins than..you would usually buy, then we purchased some almonds and cheap organic yoghurt from the little market down the …

dear rice, i love you.

last night I had an urgent request from my stomach for some warm, delicious dessert. and so in the spirit of trying new things, i decided to attempt something i have never before attempted.

i made rice pudding.

the results were outrageously satisfying and I highly recommend this recipe to anyone on a budget or who just wants to try making what is possibly the greatest winter dessert of all time. and as it contains both protein and carbs, i’m sure you could even skip dinner altogether and head straight for this …

mulling wine

we have 2 new goals for this winter.

1. find the best mulled wine recipe

2. drink lots of mulled wine

so to begin this adventure we purchased FOUR bottles of the cheapest bottom shelf wine we could find.

$34 later we began batch number one with the $6 bottle:
