Ever been to a music festival and missed out on seeing the very best sets because:
a) You didn’t know which bands to look out for; or
b) Your friend Tessa was spewing in the toilets and you were holding her hair back; or
c) You were spewing in the toilets and had nobody to hold your hair back (because Pam was busy holding Tessa’s hair back)

This is amazing. We had an eggplant in the fridge that we NEEDED to use up, as well as some goat cheese that we bought on special a while back and so this is what i came up with.
I also think it would taste amazing with roasted red peppers.
I used:
- 3 cloves of garlic (chopped)
- half a small brown onion (chopped)
- some olive oil
- a small eggplant (aka aubergine, chopped into 1cm cubes)

Yesterday we biked 40km to find a fish-mongers. It was a long day.
Upon arriving home with our 1.5lb bag of mussels, we noticed the hordes of people spewing out of the pubs, bars and restaurants along Broadway. It turned out that Canada was playing America in the men’s hockey… Kind of a big deal.
